Friday Favorites: Date Night Edition

Ahhh, Friday! This week went by fast for me since it was a short week! We are off work today because it is one of my best friend’s wedding day! Such a joyful way to kick off the weekend.

This week was back to school for my husband, and Tuesday was his 21st First Day of School! From Kindergarten through college and now teaching, he has started school every single year since he was 5. I wanted to celebrate his accomplishments and show my support for him, plus we decided Tuesday would be our date night for the week, so I decided to do something different.


In an attempt to go out to eat less frequently, we are forced to get creative with our date nights lately and come up with ways to do something fun and different without spending a lot of money. Since I knew he’d be tired after his first day back, I decided to do something relaxing and fun at the same time: a blanket fort!


When you look on Pinterest for at home date night ideas you see so many different versions of blanket forts and cute dinner at home ideas, so I decided to give it a shot!

Finding some way to get the blankets high enough that we could sit on the ground and still look up at the TV was definitely the most challenging part. I ended up getting two folding chairs and setting them up on top of our couch so they’d be higher off the ground. The back of the blanket fort was held up with three bar stools turned upside down. It wasn’t the classiest looking thing, but it sure did look cozy! I put a bunch of extra pillows on the ground and covered them with blankets, and then strung some white Christmas lights around the top of the blankets to finish it off.


My husband has a recent obsession with champagne (he is a beer person, but every once and a while he breaks out champagne on a random week night because it sounded good to him) and chips and salsa, so those were our after-school snacks.

He got home from school and we ate some snacks while watching an episode of Desperate Housewives (I watched the entire series in high school and now am rewatching season 1 – I forgot how much drama was in this show! So addicting!).

I made his favorite dinner in the crockpot and it was a hit like always! It is the easiest dinner to make and I don’t even know what it’s called, but it will forever be one of my favorites as well. I have yet to make this for someone who does not love it.

This is what I made for him:

Chicken Salsa Recipe


  • 2 16 oz cans of Salsa
  • 2 cans Cream of Chicken
  • 3 frozen Chicken Breasts
  • 2 cups of Rice
  • Sour Cream
  • Shredded Cheddar Cheese


  1. Combine salsa, cream of chicken, and chicken breasts in crockpot. No need to stir yet – just dump them all in there.
  2. Cook on high for 3-4 hours or low 6-8 hours.
  3. Check crockpot an hour before you are ready to eat and stir. Use two forks to shred the chicken.
  4. Combine 2 cups rice and 2 cups water in a steamer – steam for 30 minutes.
  5. Serve rice with the chicken and salsa on top. Add shredded cheese and sour cream to your liking.

That’s it! It looks like slop but is amazing, I promise. I was so excited to eat it that I didn’t even take a picture of it, so here is one from a few years ago. It’s a terrible picture, but you get the idea. (We had corn in it this time but usually don’t add that).


We had this for dinner in our blanket fort and spent the evening watching Bachelor in Paradise (another ridiculous show that’s filled with drama – I know it’s terrible TV but now I have to keep watching until the end;).

The trickiest part is going to be finding ideas other than a blanket fort to do each week! We’ll see how long this creativity lasts 😉
